Swallow Cellar produces distinctive and versatile Oregon-style Burgundian and Alsatian varietal wines with a reputation for outstanding quality at value prices. We offer Pinot Noir, Pinot Gris, Riesling and Gewürztraminer.
Swallow Cellar wines are made from the fruit of select Oregon growers. With 35 years of vineyard experience in Oregon, we possess the knowledge and expertise to target and nurture the appropriate sources. We grow and purchase our grapes from site-specific vineyards situated at elevations between 1500 and 1600 feet and subject to day to night temperature swings of up to 60 degrees during September and October ripening seasons. At such altitudes, cold nights restrain respiration of acidity and hot, sunny days encourage favorable sugar photosynthesis. This singular arrangement of elevation and climate, unique to Oregon, lends itself to the optimal acid retention, superior flavor, and full ripeness that typify our wines and permits them to pair brilliantly with a broad spectrum of foods.
Our Pinot Noir grapes are gently de-stemmed, fermented in small lots subject to temperature-controlled fermenters, punched down a minimum of once a day, and aged in French oak barrels. Gewürztraminer, Pinot Gris, and Riesling are fermented in stainless steel tanks, aged on the yeast deposit for three to six months, sterile filtered, and bottled within six to nine months of harvest. The Gewürztraminer, Pinot Gris, and Riesling retain some natural sugars and are constructed in an off-dry style.

PINOT GRIS
Vibrant aromas of pears, apples and melons mingle with subtle spice notes tempting you to take the first taste. The flavors are plump, juicy and delicious, balanced with just the right amount of tangy grape acidity to keep the wine pleasantly refreshing. Pinot Gris is versatile on the table, pairing well with a wide array of foods from salads and seafood to poultry and pasta.

RIESLING
Our Riesling is a lighthearted and versatile wine that will enhance a wide range of foods. Finishing just off-dry, it has a particular affinity for slightly salty dishes such as ham, smoked salmon or the traditional Alsatian pairing of onion and bacon tarts. Its floral and stone fruit aromatics and gently refreshing mouth feel also make it one of our favorite wines to toss into a basket with some fruit and cheese and spend a afternoon by the river.

GEWURZTRAMINER
The Germans call it spicy, we say wow! A glass filled with pungent aromas of citrus blossom, mangoes, pineapples and Asian spices also delivers a big dollop of fruit flavors. Perhaps a bit more intense than our goal of providing delicate, subtle flavors, what the heck, it’s Gewürztraminer and we can’t help it if it’s a little over the top in intensity. Finished in an off-dry style that seems neither dry nor sweet. Enjoyable as a simple sipper, it can also stand up to full flavored and spicy fare.

PINOT NOIR
Teasingly aromatic scents of raspberries, strawberries and cedar incense telegraph that the wine is delicate in nature. A feminine wine from the start, we’ve been judicious in selecting barrels to age it in, no new barrels, just well seasoned wood that allows the floral and spice attributes to shine through. A pretty Pinot Noir. Try with grilled or poached salmon, pork tenderloin or roast, or simply with your favorite cheeses.
